Summer Picnic Relish

I always liked the idea of relish, but never warmed up to the overly sweet, green mush that ritually accompanied the mustard and ketchup at our weekend cookouts and picnics. Typical picnic relish is made with chopped sweet pickles, which have already been cooked, and then cooked again when made into a relish. Mush.

Creating a better, Wicked Good relish, with tender vegetables that still had a slight crunch and light sweetness, was easy with fresh ingredients. We started with our Sweet Pickle recipe, added our choice of vegetables, an extra pinch of sugar and piled it high on a mile-long, all beef hot dog (we’re working on a homemade version of those, too).

Summer Picnic Relish

Yields: 6 servings
Method: Marinating, Macerating
Allergy Info: Soy-free, gluten-free, dairy-free

Sweet Pickle Ingredients:
1 English cucumber
1/2 cup organic sugar
2 tablespoons Kosher salt
2 tablespoons apple cider vinegar
1 1/2 cups water

Relish Ingredients:
1/4 cup diced red bell pepper (1/8″ dice)
1/4 cup diced carrot (1/8″ dice)
1 tablespoon minced shallot
1 tablespoon organic sugar
1 teaspoon apple cider vinegar
Salt and pepper to taste

Make the sweet pickles:
Cut the cucumber into 16 spears, approximately 5 – 6″ in length and place into a shallow baking dish or container, large enough for the cucumbers to lay flat, but small enough for them to be submerged in the liquid. Sprinkle the salt and sugar over the cucumbers, and toss to coat. Add the vinegar and water, and set aside for 1 hour and fifteen minutes.

Make the relish:
Remove the sweet pickles from the liquid and finely chop into 1/8″ – 1/4″ dice. Place in a large bowl and add the bell pepper, carrot, shallot, sugar and vinegar. Toss to coat all vegetables and add salt and pepper to taste.

Serve immediately, at room temperature or chilled. Store in the fridge, covered, up to 7 days.
